If you're more looking for "something to do", just looking at "What is rare?" might not always be the best way to go about it - for example the emotes you listed arent rare because they're difficult to obatin ingame, but because they cost real money (and I suppose those that arent directly on the mogstation but are tied to physical merch like the figurines are also difficult to obtain... but not ingame, so work towards those isnt something you can do while playing FFXIV). Certain other things are also rare because they basically involve heavy RNG, but dont generate much playtime (aka: you can get the Peregrine Helm from Quick Explorations, but all that involves is sending your retainer on a quick exploration...) or they simply cant be obtain anymore (the Dalamud Horn, for example).

May I ask if Eric is your main (and maybe only) character? Or is he an alt that you created because you actually farmed all EX-primal mounts, got every job to 80, are an expert crafter and collected all those low-hanging minions?
If he is indeed your main, you're lucky! There is still so much you can - like leveling other battle jobs, trying something new, like healing or casting, that you may or may not like; farming mounts that might not be quite that rare, but are at least achieveable - or going for the rare stuff after all, now that you made your list.
Just keep in mind that this list isnt so much a reflection of "What is keeping people busy longterm?" but also includes things that are rare for reasons that dont involve actually playing the game or achieving something within it. Looking at rare items can be a first step to figure out what the game still has to offer to you, sure! But if you're just looking for something to do, one might be able to give better advice in which direction to look - without sending you on the quest for some dinosaur-mounts or emotes that will cost you 140€ but come with a free statue!
