I think there’s more, but I don’t pay attention to who’s what color I just see them as characters. If you need to count how many of what color or race there are then there’s something wrong with you.
Again with this? Are people really so shallow that superficial traits are all they care about? Aspire to a character's actions, not the character themselves.
I think it's one of those things that only sticks out to you if you're constantly seeing people who don't look like you in the media. I'm not in that situation, so that's just my understanding from what others have said.
And yeah, if you're not in that position and therefore don't think of it then it's hard to firstly remember to aim for that character variety, but also to know how far to go with it. I'm not familiar with [X], so should I write a character who is [X] and would it be taken as representing them badly? Is that better or worse than not at all?
Write the character first, then decide everything else. If you focus soley on how [X] would act then your setting yourself up for "misrepresentation" and all the nasty labels that come with. Plus by focusing on how [X] is supposed to act you're stereotyping which is also bad because you're saying that all of [X] act a certain way. Personality should come before appearance.

That said, even if they gave us more facial structure options, there's no way we could get it close enough, and they also aren't going to stray from making the main cast of any FF game beautiful by Japanese standards / What Corporate says will make the most money via marketing. This is why the Derplander is a pretty, albeit basic, bitch.
Also something to note about Ala Mhigans is that it's a nationality, not a race. Highlanders + Midlander Hyurs, Miqote Seekers of the Sun, and Hellsguard Roegadyn are all common in Ala Mhigo. Highlanders more than most. The RDM mentor is Ala Mhigan for goodness sakes, and he's paler than Lyse or Minfilia.
POC makes no sense because it's a fictional world with fictional races, irl races don't apply.
But I do indeed notice how pale skin is so predominant, especially among scions, as my main character is dark-skinned so it stands out.
As others have said, blame the obsession for pale skin Japanese and neighouring countries have.
One thing that never added up though, Luoisoux was very dark skinned. His nephiews are very light skinned. Something doesn't add up.
