If you press ESC, go Keybind, then Targeting tab, you will see that you can set hotkeys for "Set Targeting Mode For....". Here you can set up hotkeys to switch between targeting modes. For PC, I typically only have two; for example, I have "All" mode to return my targeting to normal, and "Enemies" mode to click-target only enemies. However you can customize exactly what you want to filter, by going to Character Config -> Control Settings -> Filters. You have to enable Filter Customization.
edit: oh, just realized this only works for targeting with a controller :\
the only other way for PC clicking is if you hold down X... but I wish there was a way to toggle it
