As I understand, DNC has roughly the same APM requirement as RDM (prob a bit more because of oGCD spam during their burst window) and they're both pretty viable for current endgame content, though RDM is a fair bit better off as is. Both jobs are also fairly easy to learn, but RDM is likely going to be better on your hands because its burst windows are less button-mash-intensive than DNC's.
Both are probably the simplest. Rdm is whichever meter is lower so that magic. Hit 80 on meters do melee which is like 3-4 buttons. Rinse and repeat.
Dnc is like pick a partner, hit a button hit one that procs. Do special flashy dance button. Hit other leafy looking button to flourish. Rinse and repeat. Oh and pick buff for partner. Rinse and repeat. I love both
RDM is the easier of the two for sure. Dancer's main rotation is easy with relative low actions per minute, but their burst phase can be an APM button mashing festival depending on your proc luck so it won't be great for carpal tunnel. RDM will never have a particularly high APM even during their burst phase. They're just kind of average the whole time. They both have roughly the same number of skills overall, but DNC has more buttons to choose from during their non-burst phase. E.g. I have their single target GCD attacks (which convert to the GCD steps) on buttons 1 to 4 and their AoE GCD attacks on alt-1 to alt-4. Due to Flourish, Standard Step, Technical Step and DNC AoE being better to use on 2+ targets you'll find that you'll be switching back and forth between these 8 GCD skills fairly frequently. I have a plate in my wrist from 2 years ago which has healed, but find this a bit awkward sometimes. RDM only has 5 GCD spells during their non-burst phase and I can use all 5 with bare minimum movement of my wrist so it's much more comfortable. 3 of these skills are even converted into skills used during the burst phase, thus further reducing the amount of movement I need to do with my left wrist.

So right now leaning towards to boosting RDM to 70 since dancer is at 80 atm
I personally wouldn't bother boosting it, since it starts at 50. The RDM gameplay is nearly identical from 50 to 80 so leveling it normally would be a good, quick way to see if you actually like it compared to Dancer.
Both are very boring jobs idk
What about MCH ?
If all you are going to do is boost jobs then ask about them later don't expect anyone to respond to you with a flying care.
MCH is the worst job for someone with carpal tunnel. I don't use it much anymore because every time I played Copied Factory with it, I was left with severe hand pain and I don't even have carpal.
Mostly is due to having to mash buttons during heat charge phase because it has a timer to use the skill and due to bad ping the game sometimes won't register the buttons.
If only the devs would change heat blast to 5 stacks, it would work better.
