Can anyone remind me which jobs are "unique" to the WoL?

I mean, Scholar, as mentioned, does not have an organization or BoO, at least currently. I wouldn’t say Black Mages do either, or Summoner, or Blue Mage come to think of it. While the latter isn’t really “exclusive” in terms of actually doing it properly it more or less is. Mages in general seem to be fairly “exclusive” it seems. White Mage the WoL is the only non Padjal, so another exclusive point pretty much. Astrologian it’s an art exclusive to Sharlaya for the most part, and Red Mage it’s a defunct organization more or less.

Well Scholar does have a organization or more correctly use to have a organization since basically they all got turned into a Tonberry but the organization is still there but they just need to cure themselves of the curse which by 6.0 Job story they have found a test version of the cure.

Summoner has established itself as a organization from Allagen Civilization and we are picking up what remains of that organization. The Summoner organization has been reformed as a Immortal Flame Anti-Primal Squad by 5.0 and by 6.0 time Fordola and Arenvald have become support Tank members of the Anti-Primal Squad.

Blue Mage appears to have established a organization by the time of 6.0 due to the "recruitment" of new members for the Blue Mage shows. It is slowly growing but still in the infancy stage

Black Mage organization did exist but we know the history of their downfall but by 6.0 the job quest set in motion restablishing research into Black Mage's teachings to prevent future disasters for the Thaumaturge Guild thus we can expect more Thaumaturge going into research about it now due to establishing that there are benefits for society to go into researching Black Magic.

Compared to these jobs, DRK still remains independent freelance vigilantes acting on their own actions.

That they, at one time, had organizations does not mean they have organizations in the present day. All jobs have had organizations in some sense if you want to define it that way.
