Which is great if you've caught everything else so all the other fish information is listed, allowing you to slowly identify where the new ones are as you go through the log hole by hole by hole until you find the missing fish indicator.
If you haven't, it's not very helpful with finding newly added fish.
It's not helpful for certain quest specific fish or Diadem, which don't always display in the fishing log. Sometimes the quest will give you enough information to nudge you in the right direction. Sometimes it doesn't.
It's not very helpful in finding specifically where fishing holes are to be found. Look at Sea of Clouds. It has 5 fishing holes. Can you look at a map of Sea of Clouds and automatically figure out where all 5 will be with no outside help or previous experience?
The fishing guide is even less helpful because the only thing it shows for missing fish is "There is nothing to display".
Players who fishing for years aren't going to have much trouble. It's the players new to fishing that are getting overwhelmed by over 900 fish to be discovered, with only a few dozen of them actually useful, and a lack of in-game information on where to find them.
That said, it doesn't negate my earlier point about fishing being designed for those who like to solve mysteries. Those who don't want to will have to rely on those other players to share what they learn on outside resources.
