You seem to want a very different game ^.^;
If I did not know better I would think you were looking for a combination of FFXII and FFVIII in a Console format. I'm not suggesting there is anything bad with your ideas.. .but it really suggests quite a change.
Problem with Bestiary: Traditionally the stats of monsters are kept 'secret' FFXI (and thus I presume will be the same here). Also, they can change and be tweaked. Also, since it's multiplayer, you do not need to defeat the monster x amount of times to find out its stats. It will be done by someone else 10 minutes after the monster first appears in the land and be posted on a web site. This also might be something that can be handled well by fan sites.
Maps: That is a complete opposite of what we have here. There are some discussions on it. Some people think there should be no maps. Some that you can buy. Some that you auto get. It sounds like you are of the variety that likes the very old D&D type games where you have to do the maps yourself. Personally, I'm the complete opposite. If they make it so I can buy the map for 500 gil from an NPC vendor, then I have no issue. If I have to draw it, then that's probably going to be a game-breaker for me.
Regarding uncharted land: The link you gave me did not work. There may well be parts of Eorzea that are uncharted, but the vast majority of the land that we can now get to has been well travelled. Sounds like you may of stumbled upon a suggestion of lore that is not actually in game yet. As for surprises... well, that can be hard to do without being annoying yet still being interesting. What surprises you might be different than what suprises me. I'm sure there will be a lot of rage quitting if suddenly traps appear along a route you've been a hundred times, when you are trying to get somewhere for a party and end up dying or getting teleported back.
As for just seeing strange things... well, I see weird people riding on a Gobbue.. that's strange enough for me ^.^;;
Levequest: Still do not understand where you are going here.. you want to change it to something else then introduce something that is the same as Levequest... would it not be simpler to leave levequests as they are and then introduce something else entirely? I understand there was originally some concept behind Levequests giving you 'leave' to go and do a mission for someone in an area you could not normally go to. That seemed to never have made it into the game. Probably best to just leave it be. (No pun intended). I would not be surprised if this whole concept was removed in 2.0. Does not seem to be a very good mechanic in my opinion.
Either way, it is great that you are comming up with ideas and suggestions on how to improve the game or otherwise make the game more enjoyable for everyone. My only teeniest suggestion would be to not borrow too heavily from other games. If FFXIV borrows too many mechanics from other games, it does not leave enough opportunities to try and come up with some new mechanics on it on (that may even be better).
