Firstly: I would recommend just skipping the extra-large frames. There are like, maybe 5 fish you can display on them, and the quality is sort of not the best with the image scaled up to that size, in my opinion.
Second: Ocean fishing is an amazing way to get a variety of fish to try out in the frames. The green quality fish seem to have a different paper type in the frames themselves, so that might factor into which you want to use.
Third: This is another opinion, but I think the shells are some of the better looking images. They tend to go on smaller frames, but that leads to a sharper image.
Fourth: Sea horses display at a weird sideways angle. Works with the leafy sort of seahorse image, less so with the basic seahorse image. (again, sort of an opinion, but it does bug me a little.)
Fifth: If you have fishing unlocked, you can look through your fishing guide to view what some of the images are going to look like(at least with fish you have caught), which can also give you an idea of what fish you want to aim for.
Six: I have yet to find a list of which fish go into which frames, so a lot of that comes down to very tedious searching through logs or the MB just checking every single fish for what size frame it fits into.

There are a couple I didn't post simply because they don't look all that great, or are kind of boring in my opinion.
