The reason certain games don't have animation lock is not because of faceroll gameplay, it's because they have random and responsive aoe's that have to dealt with and their are no safespots (if there is, guess what, they get hotfixed quickly).

All games have those faceroll people who only do what they want and play what they want, that is human nature and it's not exclusive to games.

Standing in safespots and only using abilities or spells when it is safe is not strategy, it's common sense that is quite rare. Combos that require facing certain sides of the monster, abilities monsters use that you can avoid (Chimera breaths, ifrit breaths, cracks, plumes, mrd moogle aoe, antlion mandible bites, cyclops swing and eye of the beholder etc etc) are not fun to deal with this horrible server response time.

Is the server going to update my positioning before swing goes off this time? I'm out of eruptions but will the server update before they explode?

There is just so many things they could add to fights that people would enjoy, but if they continue onto the path of just stand still in the safespots and don't use abilites if it's not safe is just going to be boring as fuck.
