That is entirely up to you. If you want to go straight to 80 on a single class, no problem. If you want to take it slow and level everything, that's fine too. Unless you have some specific goal in mind with regards to leveling there's no right or wrong way to go. Just do whatever seems fun. It's not like there's a race to 80 you can lose if you level too slowly.
As for easy and fun classes, that's mostly a matter of personal preference. All classes are easy to learn at lower levels and ease you into the more complicated aspects as you level up.
A high main class will aid in unlocking new content (Content is usually unlocked through MSQ progress, which has a level requirement) and some of this content, such as beast tribe dailies, wondrous tails, and custom deliveries, are things that give a lot of rewards but have limits on how often they can be done (either daily or weekly.) For this reason, people usually encourage getting a single class up to unlock them so you can do this alongside leveling your side classes.
That said, if you feel like you wish to level other jobs, by all means do so. You don't lose out on anything, at worst you're just putting stuff off to later. Also, if anyone mentions the Armory Bonus, that's often ill-understood: It will give an xp bonus to any class lower than your highest job. You don't NEED a job at level cap to unlock it.
Well, truth be told you never have to level up a second class if you really enjoy Archer (Bard) as your main. If you wanna dabble a bit you can unlock and try jobs as you like.
Mostly it's a "do what you wanna do/think is fun to do!" Try 'em all out!
All that said, there's no real rush to get to 80 to be honest and leveling a second job from 1-80 can feel like a slog, so I would say at around 30-50 is a solid place, allowing a break from the main story when you wanna just run some dungeons.
...all THAT said, I would recommend trying out the crafting jobs as..if nothing else.. you can repair your gear anywhere, including dungeons.
