The best one is the one that you think is the best! I know this sounds silly. But it’s really true! I can actually explain…
Firstly, one never really needs to put much effort into farming white scrips, because just doing weekly custom delivery will provide you with sooo many white scrips and yellow scrips already. Every week, just make sure you do Kai-shirr delivery + 1 other delivery. I usually press Ctrl-U on keyboard to check which NPC has “bonus” that week. Then I’ll pick her/him together with Kai-shirr. Two to three weeks of this will be enough for buying all those i470 mainhand + offhands, which is pretty much everyone one would need, since the i470 left gear are useless. Similarly, Tier VIII materia can be collected slowly in the same way. We don’t need to overmeld any Tier VIII materia on any item, so we really don’t need too many of them. Thus, one really doesn’t need much effort to do collectables… so which class really doesn’t matter.
Secondly, whenever I need to farm scrips, I’ll just press Ctrl-U on keyboard again to check the collectable appraiser’s menu. Basically, I will look for items that give very good scrips (especially the ones with a “star” sign). Then I’ll try to determine if I have enough raw mats sitting in my retainer. If yes, I’ll probably go for it. If no, I’ll determine what remaining mats I need… how quickly I can get them (via retainer/ via self-gathering?)? Are they cheap on the MB? Can I just buy them? I’m quite well-off, so as long as something is not too expensive, I may just buy it off from the MB anyway. Time is precious to me, so I’d rather spend a bit more money, but I’d like to spend less time making the collectables. Yet, if the item’s raw mat requirement is a bit ridiculous, then I’ll just take another one. Thus, the decision on which is the best collectable really depends on what raw mats you have or what raw mats you can easily access… so which class is best for you would depend on that.
Back in the old days, CUL was the one class that usually utilize cheaper mats, but also requires more work to get scrips. I don’t know about it now these days though. Thus, the decision on whether you pick CUL may come down to whether you want to spend more time but less money.
Every 24 hours, the collectable appraisal menu changes. Thus, the decision depends on which class get the daily advantage really depends on luck.

Carpenter with Lignum Vitae Spinning Wheels or Alchemist with Tinctures for me.
Spinning Wheels are less scrips, but no sands needed, just lumber (3) and nuggets (1). You can keep two Retainers on mats Duty and spam away on Starred turn in days.
Remember your Spiritbond potion while you mass-craft the lumber/nuggets and Extract Materia for a bonus.
