The valentione's day maze is not particularly large or challenging though, and it's only available during the event.

That actually sounds really fun for Gold Saucer... something instanced like the Leap of Faith that just goes to a map like the Valentione one, but more complicated, and solo and with cactuar statues to collect before making it to the end.
The 1.0 map was just bad design, so it wasn't enjoyable because it wasn't portrait as a maze ..just as the open world map. Here it would be an actual well designed MAZE that you know is there to challenge you. Where it keeps changing. with traps , jumping puzzle , riddles and so on ..., where you can also come out empty handed for failing...to keep it challenging. it Would open up for some monthly event like where you can win big for participating. something like that. One that you can run solo or in party. it might not be a cup of tea for everyone but i feel many including me would enjoy having that.
psss someone make this reach devs ears pls lol

Agreed, and the path ahead of you being visible takes away part of the fun. I think the walls should be taller and more imposing, to add to the mystery of the maze.
I would love to see mazes introduced as some sort of archaeology or ruin-exploring content. For example, how cool would it be to have different "expeditions" to places like Gelmorra or the Garamsythe Waterway and Lesalia as maze-exploring lore drops?

To be fair, the point of the Valentione's Day maze is not the 'maze' part, but that you have to coordinate with your partner on the other half of the divider. The maze is just there so that you can't just blindly sprint onwards but have to backtrack in places so that your partner can get ahead on their half of the maze.
Also, I half-jokingly feel like that 1.0 map of the Black Shroud should come with a NSFL (Not Safe for Legacy) warning label. Thinking back, I'm pretty sure that getting to the Black Shroud and going "What fresh hell is this?" contributed to my departure from 1.0; it felt less like a fun challenge to me and more like the devs were just throwing up roadblocks to slow progression (and possibly delight in our misery).
(On the other hand, I actually enjoy what I've done of Eureka, so I grant I may not be the best yardstick to measure by.)
