No, Thief IS Rogue with a different name. (because they didn't like the negative connotations of being an actual thief, the Rogues guild is made up of former thieves who have changed their ways)
Not every job is going to be fully realised as a final job, in this case it's used as a starting class. Similar to how in FF1 Thief upgrades into Ninja.
Rogue uses knives, has the skill 'Mug' and their gear is basically the classic thief gear. There's nothing else they could do to make it any more 'Thief'.
For spells you can write macros to replace the names. For jobs, you can label your gear sets. It’s an odd job fantasy thing to me to want everything renamable, as I can’t think of anywhere in a game you can do this. I can get maybe the holiness of a Paladin puts some off, it did for me in video games for a while, I’d avoid anything too holy or churchy but I love Paladin in this game and have long given up any hang ups I might once have had.
As an RPer I can see some appeal for alternative job fantasies, but in character I write my Dark Knight character closer to Mystic Knight or Rune Fencer because I think it suits the character better than some of the darkness aspect of DRK, but nowt I can do about the animations, where the fantasy matters, but pretend.

Until the macro can rename it during the casting bar and on the casting bar its not really a fix just renaming it with a macro the second you see your bar saying Casting:Fire 2 or Cure 2 kind of kills having a macro for itFor spells you can write macros to replace the names. Bad enough people give u .... over rez macros that honestly you shouldnt have to use that much not your fault the people are standing in stuff and dying and you gotta rez em

/micon will give you the icon, recast and so on
And you can name it what you like.
It's not a perfect solution as there are obvious flaws, just I don't think there'd be enough of a demand for your request for them to implement it. I wouldn't object to it but I expect many will not see the point of it.
Where has you heard the term "Paladin-Knight" exactly?
The name 'Paladin' alone is correct.
Is "theif" the upgrayded job crystul from "rouge"?
