Similar suggestions have been made a fair few times over the years, actually. I also don't think there's anything wrong with the suggestion itself, especially since it isn't taking options away from anybody else.
Whilst it has been made a few times over the years, I think they're not believing the comment in the OP about it not being about men in wedding dresses and the timing being kinda...off and whilst coincidences happen, I can see how one might think it's BS and be suspicious that the ulterior motive here is that the OP doesn't want to see men in dresses but is using an existing debate to push the same result. "I don't like men in dresses" is not going to win many people over.
That aside, for the actual argument, if ithey're not working on something else that's more important, sure, but even as an immersive player, it's pretty low on my list. And whilst it might mean if I were to use it, I'd lose people in frog suits fighting Hades, I might have horribly mismatched gear that looks out of place and ugly because there's pieces from different sets. I am all for choice, but I care so little that I'd rather see time spent elsewhere as many parts of the game still feel unfinished.

I glam with the same feeling I have IRL to express myself and I want people to see it. Whether i'm feeling mad skimpy or serious thematic glam, I want you to see those cheeks in all it's glory

I mean it is on us. That is why i want you to not have options to change that. We all play by the same rules after all, and I don't want a wrench to be tossed into the fashion area. I don't want you to have the power to see what I wear unless I pick that. Your choice in it is not needed or wanted. How you perceive my looks is on me.

Why is it okay for you to play as a fat chocobo, but it's not okay for me to play with my teammates wearing lore-appropriate gear? Especially if it's only client-side (ie, it wouldn't make a difference for you either way)

No options would be taken away from you. If you want to glamour your character in a specific outfit, nothing is preventing that from happening in the context of this suggestion. It just so happens that if people don't want to see a specific glamour set for whatever reason, they'd be able to prevent it from showing on their screen.
It's the most efficient and fair compromise all around.
That's a false equivalence. Nobody is arguing to prevent you from wearing lore-appropriate gear if you wish to do so.
In any case, glamour is just as critical to a lore-appropriate outfit as a novelty one. Is your tank looking lore-appropriate in the YoRHa dress or Shisui set? Your dancer in an outfit designed with machinist in mind? Your red mage in bulky wizard robes?
Gear can't simultaneously cater to the aesthetic of all the jobs that need to equip it, even if they didn't throw in novelty themed sets every so often.
If they do it I hope it would not default to the racial starter gear...because some of those are really not very immersive at all. The fem miqo gear...I do like it but it's not really appropriate for any class when you think of the sort of gear any of them wear in lore.This request isn't unreasonable at all, FFXI (gasp) has a setting that makes other PCs load in wearing default racial gear for those that want it. If some people don't want to see what they consider ridiculous outfits I don't see the harm in adding an option that makes other characters load in level 1 starter gear or their class's AF or something. Sure some people might not get to see my personal expression but if they turned on that setting I doubt they cared about or would notice the personal flair in the first place. Having this as an -option- isn't a problem.
This is an excellent point. A lot of gear with their base look do not look appropriate for the role that can equip them. Certainly dancers would never look like dancers at all given most ranged phys gear has been designed with brd/mch in mind, which have an entirely different aesthetic.
