We'll never know tbh. With Stormblood they didn't do a battle or trial against Amaterasu even though we had trials against Susano-o and Tsukiyomi. They could have taken that further and done Izanagi as well.Based on previous two expansions, only three of the seven are from the chronicle of new era. The rest are MSQ trial.
So we'd probably only get ruby, emerald, and diamond in 5.2, 5.4 and 5.5.
We'll get another MSQ trial in 5.3.
Unless they decided to change the pattern that is.
I have a feeling the secret trial they mentioned is part of the main story. It's most likely that trial will have a dragon mount and ruby weapon will have a garlean related mount for the extremes respectively.

SE ripping off their previous games instead of actually coming up with anything original in the name of "Nostalgia" is hardly new.
Also, Omega was a part of the MSQ - Does that make the Omega raids Canon? Nope. Thus far the only canonical raid is Coils - Eden might be, but we'll have to see after all the tiers are out.
Yeah, sadly they didn't, one can hope only that SE grabs up these two missed trials somehow later eventually as Hildebrand Trial Fights when is journey somehow lets him return to SB regions where Amaterasu n Izanagi/Izanami could play a role in there.
The only fights that could really be considered "non Canon" would be Minstrel's Ballad fights which are specifically tall tales. Unless specifically stated otherwise, there's no reason to not accept most events in game as Canon. More specifically, nothing in Omega nor Alexander contradicts other Canon and as brought up, elements from both are involved in the Twinning.
As far as "Alexander exists whether we interacted with him or not..." The timeline where we interacted with him and stopped the Illuminati is the timeline he chose. If we never appeared to stop the Illuminati well... "Canon" becomes the least of our worries since we'd have a goblin army running around in a mobile fortress doubling as a time God lol
TL;Dr it's strange to claim only Bahamut raids are canon and to have one throwaway line as evidence, but then turn around and refute an entire dungeon dedicated to Alex and Omega as evidence that the other tiers are likewise canon.
Don't forget that we're also getting a super secret trial, along with the Ruby Weapon trial. I'd say that already counts as a change in the pattern.
I also forgot to add in my previous post since someone is questioning if the raids are canon or not... The Encyclopedia Eorzea Volumes 1 and 2 would like to chime in and say "Ello'! Please read me before saying what is and isn't canon. Because right here with in my pages are lore information on all the raids..."
Seeing as I'm not at home yet I cant direct you to exactly which book they are in for all of them but I can 100% confirm without a doubt that the Omega Raid is mentioned in Volume 2. When I get home I'll edit this post with pages and books. Omega is talked about in the Omega Records page 64 -68 volume 2 Encyclopedia Eorzea. Alexander is mentioned on 258 volume 1 and page 201 talks about NOAH and the CT.

Wait people are in doubt if the raids are canon?
It's because of Alex raids and Omega raids and Crystal tower raids that we even have Shadowbringers as an expansion. The "Tales from..." series confirms that along with Twinning dungeon and the Exarch himself.
Next they'll clain Eden isn't canon despite it being mentioned in the MSQ that Thancred and Ryne are busy with their ventures into the Empty studying Eden.
I guess for a lo of people who don't read the Encyclopedia or side content like the Tales series they won' know all the lore bombs they miss out of but factual it is since it's written by XIVs lore people to fill the world and cover events/info we might miss in game.
As far as the Weapons go, colour me Hyped![]()
Another encounter you will be tired of in the 7-8 time.
I'm quite happy about this, as I enjoyed my times trying to kill the Ruby Weapon back then in ye old FFVII
