Usually the things that are on timed nodes as they can be annoying to get when you need them in the moment.
But really, each servers market is a bit different, you'd have to judge what's most profitable yourself.

Even low level items can sell for a lot of gil if it is something that players buy in bulk. Check your local marketboard and sales history to see what sells on your world.

It can change fast. I have seen some timed node items go from a few hundred to 2 - 3K and back down again in less than a day.

Stuff for ALC tinctures are easy to get and sell well. Sweet Alyssum, Light Gerbera, Lime Basil, Fernleaf Lavender, and Tiger Lily.

Most food related items will sell well and consistently. Take a look at the mats for the current endgame foods and sell stacks of that stuff. Trust me, culinarians like myself will gleefully snap up a stack of reasonably priced russet popotos or peppermint if it means saving ourselves who knows how many hours gathering on top of our crafting. Particularly if we're crafting to sell. It takes a couple of hours to go through even 100 crafts, and it's even worse if we have to eat food to complete the craft, so a great many of us will take all the time saving help we can get!

Things that are rare, timed, or otherwise have specific requirements.

Your best bet is to check items on your market board to see what sells best on your server though, cause it varies by server.
