I noticed in this video that a player seeming has the paper partitions but without the sliding doors, essentially just having pillars they could just walk through. How do you do that?

It is rotated. It is like the side of the paper Partition.![]()

I believe npcs, mannequins, and some other furnishings keep them open.
Yeah you can place an NPC Close by and they will stay open. Most people just hide a Lalafell (not joking) close to the door and it stay open.
Just try it yourself. Set a paper partition (or any other door) up and place a NPC next to it. Personally I'm getting annoyed by the constant opening and closing sound so all my doors are always open with hidden NPCs as well![]()

As far as I know. just the vendor NPCs and Mannequins will do it. They need to be placed by the partition within about half the width of a tile of the White Marble Flooring for the door to remain open.
Any other furnishings (including interactive) appear to just clip the doors as usual.
Allagan nodes would count as vendor NPCs too. While you're in edit mode they're represented with the same generic "human silhouette" NPC as the actual people.
