Even with cross-class skills being axed, the sheer amount of stuff you need from other DoH jobs to craft (Aside from ALC/CUL) is going to make most people feel like they're going to need everything leveled regardless.
Yeah. Omni-crafting was never just about cross-class skills. If it was you could safely stop at 50/54. It's also about being self sufficient. Your armorer is going to be buying a LOT of cloth and leather if you don't also have weaver and leather at similar levels, etc.
I understand the feeling. I'm working my way to 80 on each job. It takes time but man there is a huge difference between before update and after. I went Weaver-Carpenter-Blacksmith-Goldsmith 80 to be able to craft main ingredients. Working on Leather now but in the mean time kept sending my retainer to get (edit) Smilodon Skins because the drop rate is so low. Now after update any little craft I do gets at on of XP, I should have just waited lol You'll get there just keep at it!

Yep, and I had spread my craft levels across all 3 beast tribes so I could do all their quests each day. Of course, the disadvantage is when some of them finally hit 70-80, there are always others too low to make the cross class stuff. Of course, if I had leveled them all together, then it would be much slower with only 3 BT quests per day at 50+
The other discouraging thing is leves, which invariably require mats from all over the world, forcing me to use aetherite tickets to go collect them. Or, it requires me to go kill 6 different types of beast, for skins / meat, where it's next to impossible to get HQ.
(I only have two retainers, one botanist, one hunter, both in the 60's, so using them has limits.)

Retainers are your friend for leveling LTW.
You also used to be able to get tons of HW leathers cheaply with bronze spoils, but now that Diadem is dead for the time being, that's sadly no longer an option.
Yeah, LTW kind of sucks for that. You can gather 100 ore in a matter of minutes, but spend half an hour farming tigers and only get 12 skins. Retainers are your friends.
Oh, I don't know, I mean the prices of materials *are* dropping at the MB.
Earlier today, I wanted to make Lv74 tools. One of them was a Lapidary Hammer.
Said hammer requires a Manasilver Nugget. I don't have Manasilver and I wasn't confident in my ability to HQ them.
BUT, I saw 2 of them up for 2,000g each. Heck yeah! 4k gil for a new tool? gimmie!
I've been seeing all kinds of materials in the 70s for <5k per.
Lots of people are crafting now. It's no longer "Only the Rich or Already Established Need Apply".
You've written before about how unwilling you are to use teleports of any anount over... 300 gil, I think it was?
I really think this is a self-inflicted problem for you. The game is built around the average player having to make frequent teleports that cost up to 1000 gil (700 if your FC has the fee reduction buff active, 350 if a favoured destination) and being worried about spending that much ever is just crippling in ways that the developers don't see as an issue.
Plan your trip and gather efficiently, sure. Make use of your favoured destinations and return point. But don't see it as unreasonable to have to warp from Eorzea to Othard - it's expected that you will do so. Regularly.

And to the OP:
If you get retainers up to Level 70, they bring in about 6-7 allagan coins. Said coins sell to vendors for 500g each (or 1000 to Doman Enclave up to 40 per week). Running dungeons gives a bunch, as do completing challenge logs. Now, granted I have 4 retainers instead of 2 doing this, but over a month or two, while teleporting between Peering Stones and Tamamizu daily for Beast Tribes and while selling almost nothing on the MB, I was still able to make ~1 million gil in about a month and a half IIRC, just doing that, getting gil from the daily roulettes, gil from dungeon mobs, etc. The teleports don't (or shouldn't) hurt your wallet whatsoever. It's worth pointing out that the beast tribes themselves give 1,500-1,800 gil per tribe per day which covers the teleport fees alone and then some.
Also, make clever use of your Free/Favored Destination and your Home Point -- set one somewhere in Othard, perhaps at Tamamizu (If you do the beast tribes, which you SHOULD), set one of them in a City-State (I have mine in Ul'dah because I'm a Flame), and the other, in Norvrandt once you get there. If, for example, you need to go to Azim Steppe... instead of paying 999 gil to do so, warp to Tamamizu first, and then warp to Azim Steppe for ~250 gil. Yeah, sure, it's 2 teleports and 2 loading screens, but it saves you some gil if you're that worried about your wallet. If you don't have a Free Teleport, GO GET ONE! One-Time Password Tokens are great for extra security and hack prevention anyways and the Free Teleport is a great reward from having one (IIRC that's how you get the free teleport?).
EDIT: Also, if you're worried about gil, try selling some crystals if the market is any decent. Surely out of all the items, everybody needs crystals and it should be stable enough that you could sell those and make some mild amounts of gil? Or other low-level materials used in high level crafting like Silver Ore, Effervescent Water, Cobalt Ore, etc that nobody who is Lv60+ feels like going back and getting? I know lately I routinely see these going for 100-200g per item and as long as you didn't flood the market with them, you could make some decent bank at an early level doing this.
EDIT2: Another thing to do, use your Chocobo Saddlebag to store crafting materials. Once a week, go out and get a stack of materials that are commonly asked for at your level and keep them in the saddlebag, tucked away neatly. That way if you have a bunch of, say, Doman Iron or Palladium or what-not in your Saddlebag and they ask for that, you can just open your saddlebag and grab it. That way, you can teleport once, gather a bunch of materials some day you got nothing to do, and you'll have them when you need them.
