I'd love to see difficult solo content in the game. I doubt it will ever be a priority though
I think people would be fine with it being like job quests if it was difficult like an ex/savage fight. The thing people are really asking for here is difficult solo content, I don't think many people care if their healer version of the fight has 10% less HP than their dragoon version, as long as it's actually a hard fight.
Solo extremes are fun but I don't think they would work well here due to development and balancing issues. If this were an action MMO where all classes have nearly the same potential as far as damage output vs defense vs self healing sure. This isn't an action MMO though and the solo instances would have to be balanced per class on an individual basics. That SAM quest you mentioned was challenging and it was based around a SAM only pushing their abilities to their limits. Now that same fight would have to be balanced for a WHM pushing their limits, or a PLD, or a MCH, or a BRD, and so on. It may work as a once per expansion thing, but I wouldn't see them doing more then that just on development alone.
