Does anyone know if we're getting new crafted crafting/gathering gear with 5.1?
Or if you don't know, have any hunches?

Of course we are, we get new sets of crafting and gather gear every odd numbered patch I believe. Also, shouldn’t you know this, since you’re so knowledgeable in crafting?
Oh boy, someone has their feathers ruffled.
Well for one thing, it has not been all the X.1 patches where we got new crafted crafting/gathering gear.
For another thing i did not see anything specifically mentioned in the live letter about it. That and with all the skill rebalancing on top of Ishgardian Restoration I was curious what people thought.
They've been adding new crafted crafting gear every odd patch (except for x.5 patches) since 3.3. Even then, the crafted AF2 was added in 3.05 and next upgrade was with ironworks in 3.3, so basically the 3.1 crafted sets just come out a little early then. You really have to go back to ARR to see gear progression not follow a predictable pattern.
They might have kept it out of a live letter because while every other expansion sequence had green gear at 5.1 not every other expansion sequence saw a revamp of crafting, as mentioned for this cycle. It's possible we will see it mentioned in its own live letter.
Back to though, we should see what amounts to carbon weave for 80. It will be better than what we have but will end up being supplanted by a white scrip set before we see level cap raised again.

I imagine the prices on the stuff are going to be steeper then usual when considering it's likely going to be needed to tackle the Restoration efficiently.
Previously, there wasn't really anything to do with the new crafting gear until the next even-numbered patch drop.
If this follows the Stormblood formula, 5.1 will introduce the equivalent of the Ala Mhigan crafting/gathering gear. This gearset did NOT include offhands, belts or accessories and the base level 70 stuff from 4.0 for those slots was still BiS until they added the Onishi set (which was a full set of MH OH body and accessories) in 4.3.
The scrip gear has never been BIS, at any point, and is always inferior to properly melded crafted gear currently available. I don't expect this to change.
That being said, no expansion has exactly followed the previous expansions in terms of crafting gear progression. SB was different from HW, which was different from ARR. So far ShB is identical to SB on release, but the Ishgardian Restoration content might shake up the next phase of progression from what we got at 4.1.

Many people weren’t happy with two sets of white gear in a row, so it’s likely going to be green. Haven’t gotten a single crafted blue set of gear in SB either. If this follows the Stormblood formula, 5.1 will introduce the equivalent of the Ala Mhigan crafting/gathering gear. The color of the gear's background doesn't mean anything at all. I mean, sure I like my endgame crafting set to have a pretty background too, but as far as actual gameplay and progression goes it is irrelevant. Background color is just a somewhat nebulous indication of how the item is obtained. Blue usually means it is gated behind some sort of timed/weekly currency, green usually means it is dungeon gear or related to some item obtained from dungeons, pink means it has randomized stats, and purple means it is a relic.
Sort of regret not max melding my accessories, if we get a new set I'm going to max meld it but if we don't get a right side, it doesn't feel worth pulling three 7's out of each accessory to replace the overmelded 6 with an 8. First world problems
It doesn't, but since it feels slightly fancier and doesn't hurt the game in any way, why not? I'd like a blue set for the last patch.
