To gather all the materials needed and then craft it is not the most efficient use of my playtime by any means when I have the gil to just buy it all off of the MB, or even use the HQ stuff a little longer as the game design allows. But I really enjoy doing it. I do not enjoy spamming roulettes at all. I do them only because they are a daily bonus that also provide other rewards on top of the exp.

The other thing is rushing. I think a lot of people underestimate how detrimental this is to just about anything. If you are the type of player with a mentality that all the enjoyable stuff is at endgame, then there is absolutely zero that can be done to make leveling fun for you. The best you're going to get is 'less boring'.
I agree with crafting your own gear. I do it because I enjoy it and I can't wear something if it doesn't have my name on it.
