As melee you've got: Second Wind, Bloodbath, Arm's Lenght(the slow works great as mitigation for mobs and on bosses you got a healer) and Feint. SAM also has Third Eye and Merciful Eyes, MNK Fists and Riddle of Earth and NIN Shade Shift. That's a lot if you're talking soloing.

Heck, I've tanked reasonably sized trash pulls on NIN for a good while, after tank derped and died or just somehow couldn't keep aggro.

That said, even on the non-melee, nothing in solo content really lives long enough to be a threat if you're a DPS job and in group content you've got tanks and healers - your best defense is offense, that's kinda the point of this role in the trinity.
