At the moment, my favorite two DPS are RDM and SAM regardless of where they stand in the DPS rankings. I personally enjoy them which is why I choose to play them.

RDM is very simple, build your mana levels, throw in some melee attacks, use your "finishers" to do big damage. I enjoy this class because it's got great mobility, decent damage and doesn't need to rely on DoTs or damage buffs to get the most of their attacks. Doublecast feels great with AoEs as well.

I have love/hate relationship with SAM. I love it's aethetics and it's attacks are pretty fun. BUT it still feels kind of clunky to me even at higher levels. The rotation is pretty easy especially with the new skills that give you Kenki or enable you to use any skill without going to the rotation. Once again, AoEs are fun with this job as well where you literally feel like you're simply cutting through enemies like butter at higher levels.

Outside of that, to me, the single target rotation feels very slow even with a high SkS stat and Shifu which grants a 13% weaponskill cast time decrease at lv78. What bothers me the most is that the cooldowns for the SAM's attacks just feel too long leaving you to fallback on spamming the 1-2-3 rotations after gaining the shifu and jinpu buffs (that give a increase damage and weaponskill cast time) There's two high damage attacks that share the same CD time of 2 minutes. One that repeats your last high damage Iajutsu with a 60 second CD. And a crappy lv80 skill that looks really cool but requires you to stand in place using meditate for about 15 seconds, not doing damage for a measly 500 potency attack. Meditate then takes 60 seconds to cooldown afterwards. Other than that, all you need to keep an eye on is keeping your buffs up and your DoT on the enemy which I personally hate.

Honestly, the best thing to do is try them all out. Mostly all the DPS jobs are pretty fun to be honest. You just have to find one that fits your playstyle. Maybe try out Palace of the Dead or Heaven on High to see how they are at max level because you don't really get a feel for them until you really get all of their skills and traits.

And don't listen to the META...play what you find fun.
