I won't lie I really like the concept of SMN as shown in that game, with proper sized summons.....I think it might be slightly different these days.

If you don't like doing endgame raids then there really isn't anything to do after MSQ unless you like leveling. If you like leveling, just do that.
In other news, there is no technical debt from 1.0.

I tend to just hang in the NN and if someone needs help with anything or wants to have quicker roulette queues by tagging along with a healer/tank...I'll switch and knock those roulettes out for them.
If nothing else going on I tend to use the NN as a General Chat. The second anyone asks a question or needs help then I do that instead.
I may go to one of those cafes that are constantly advertised one day...be a fly on the wall...hope something stupidly weird happens so I can laugh at it.
It is vastly different these days. You could lvl to 99 in a day. Abyssea ruined FFXI, imo.
Anyway, there is so much to do on FFXIV it's hard to get bored. lvl up your gathering and crafting, do hunts, get your ponies, birds, dogs and other mounts. Level up your squadron and your trust npcs. Level up your chocobo. Tons to do!
