The pixies using gender neutral language and being natural and unobtrusive about it is one of the best parts of that, really. The fact that you didn't notice the lack of gender in their speech is a win and it goes to show that this is really possible to do without disrupting anything in game for other players.
I didn't notice it because it's not a thing in my native language as I do not play in english and we have different sets of pronounces and our version of they/them is not used to talk about just one person. And I don't know how they handled it in japanese or french so just because it's in your region like that, it's not universal.

And having as much variety in your customizable choices like the real world does is just not possible. You just can't please everyone there are limitation that come with games. If I decide tomorrow I have a new identity and can't demand companies to go out of there way to include that. And what if that identity changes to a new one? However I don't really know if most people think that the WOL is a reflection of themselves, as many male non-trans players, play female and vice versa and I don't thing they have some hidden identity issues because of that.
