You can watch one of the last cutscenes at the inn and just don't progress the dialogue. That should do the trick.

But I can't find the theme without the battle sounds....
That's the music that plays in the 1st phase when you fight the end boss.
Not sure whether it is available as an Orchestrion scroll yet.

'Tomorrow and Tomorrow' isn't the final boss theme*, it's the ending theme - the full version of the one that's used for the Crystarium's night theme ("Stand tall, my friend..."). It's a bit confusing because the tunes overlap and lyrics recur all over the place. Sometimes I can't even decide which theme is being used for instrumental versions.
* unless it got used in the final boss as well. But I only remember that playing 'Shadowbringers'.
