I don't think it would be impossible for XIV to do something similar and just make the HP of ARR S ranks increase based on the levels of the players attacking them. That way a group of on-level players can still group up enmass to fight a hunt for a reasonable challenge and a determined level 80 player could still solo one (Though they would obviously want to invite a lot of friends so the thing doesn't take forever).

Their rewards are still very significant for a piece of dated soloable content and honestly a bit disproportionate for how long it takes to kill them these days.
I'm not sure they can scale the mob's HP once it spawns in this game. But maybe they can add a defense up buff that increases/decreases according to the number of players in the enmity table or in the zone.
