I am so freaking bored of Shadowbringer's story

The ShB story is likely best story by FF14 "standards". In regards to overall storytelling in gaming, its mediocre at best.
If you haven't liked any of the story in FF14 (even a bit), this one likely won't pull you in.

Skipping dialogue and cut-scenes is a surefire sign that the FF14 single-player structure is not for you.

MMORPG stories are always full of filler (FF lore has always been boring in their single players too), they have to pad it out to cover entire expansions. And since SE is determined to force this stuff on you (unlike other mmos) the filler is even worse here. If you want good story, you have to go back to single players or other mmos where they don't have to pad so much.

I'm in the same boat as you, everyone said it was good, I decided to give it a tried, got bored to tears.

There was definitely quite a bit of filler throughout. Macguffins in every zone. Yes, there was good writing when it came to the actual meat of the story, but let's not pretend it was all good writing throughout.

This is how I felt as well. The "main" story in the MSQ was really quite good, but each town you visited had you doing several menial tasks for the locals before you could actually get back to the juicy bits. So while I really enjoyed the overall story, and had way too many late nights because I just wanted to get "one more mission in", it definitely had several spots where I was like "OK, here come the chores again!". Some were more entertaining to me than others, but overall those bits were rather unmemorable.

I guess it was only a matter of time until this comment came up. The MSQ is only a small part of what makes up XIV as a whole. Just because someones doesn't enjoy XIV's brand of story-telling, it doesn't mean that they should write off an entire MMO that is filled with a ton of other content to do.

I've been reading how amazing it was and how it rivals single player RPGs... and here I am, bored out of my mind, just skipping through textbox after textbox. And it doesn't even feel like I'm missing anything. It's just that boring and pointless.

I mean, to each their own. Different folks, different strokes. But you also admitted that you’re skipping all the dialogue at this point, so it’s no wonder you’re bored. I’d be bored too if I were skipping everything.

There are always going to lulls in any story, however everything from the Greatwood and western Amg Ahrang sets up the story for what happens in North Kholusia, not to mention events that lead up to the end of the game.

You don't have to like it. Though skipping the story, then saying you are bored doesn't do you any favors.

I will say I haven't finished the MSQ, but the opening up until the Il Mhaeg was great, but then it slowed down considerably. I am in the Greatwood toward the tail end and things are picking up again, but there is a slower slog for sure. If the stories and expansions bore you so much, why do you play this game? It's obviously not for you. Move on and be happy. Life is too short to play games you are simply going to complain constantly about.
