Low level content is supposed to be slow the game is teaching you mechanics as you level and gives you new skills over time to learn your rotation throughout the MSQ. Why are people in such a rush to reach endgame in an MMO-JRPG

I wasn't in a rush, I completed the MSQ in 2 days. I watched the cutscenes and know and enjoy the story. If I was here only for the story, I would be upset that there isn't more of it. I've been playing this game for nearly 3 weeks and only 2 days out of the 17 days I've played thusfar were in the MSQ. So far the MSQ has only comprised of a little less than 10% of my playtime. The other 90% has been in dungeons. I can't speak for everyone. But I really like FFXIV dungeons. They are literally the best in the MMO genre. WoW doesn't have the varied mechanics and diversity. ESO is pretty but you simply use a 4 button rotation and randomly dodge or block mechanics.
That's the very definition of rushing.
That's like saying "I read the back cover, I know the story"
Can't argue with this, though. Once I finish questing, I love dungeon crawls.

Who said anything about rushing to endgame?
The problem is that approximately the same amount of skills that used to be spread around 50 levels are now spread around 80 levels.
Getting skills over time as we level up is fine, but it can be done at a faster pace then we are getting them now.
Having to wait until level 26 for a basic 1-2-3 rotation instead of just 1-2 (as is the case for some classes) isn't going to teach me anything more useful than if I had got the 1-2-3 rotation at level 15, just in time for the first dungeon. Just as an example.
For some jobs it used to be the case (not sure of the current state) that their whole rotation changed at level cap. Getting a whole new rotation to use at level cap means that all the time spent learning rotations while leveling was pretty much wasted time.
You learn rotation to suit your present needs. That's never a waste of time. And every time you sync down, those rotations are applicable again.
