If you just completed shiva then there are 2 more(lvl 50) trials before you get into ishgard. Run those fights(both of which include mechanics that neither Astrus nor Raldo specifically mentioned), then come back and tell us if you think battles arent dynamic. Or watch a video of the Thundergod fight(3rd boss) from Orbonne Monastery. Its a 24 man fight where the boss stands unmoving in the center of the arena the entire* time. He uses 4 different aoe attacks(you determine how to dodge by how he holds his sword), he has a doom attack, he does 2 seperate debuffs that will kill if they arent handled right(one for tanks, one for anyone - both are handled differently), he uses a tracking aoe, he has players drop expanding puddles(if they overlap they explode), he does a move where you need to split the party in half to prevent an aoe from going off, he summons exploding adds, and during his ultimate phase the adds you fight have 4 or 5 attacks of their own. Oh, and several of his attacks will wipe the entire raid if one of the other 2 groups mess up, so you need most of 24 players to be awake and know what theyre doing. For a boss who doesnt move, id call that a pretty dynamic fight. So maybe movement isnt everything.

*Ok, he moves to perform his ultimate but you arent on the same arena at that point. Afterwards everyone returns to the initial arena and he resumes his spot in the middle.

Kiting can occasionally be useful when a ranged player that can fight while moving is fighting solo against a difficult melee enemy (which can happen in dungeons if they're the last one standing after an almost wipe). So while it's generally not an intended mechanic, it gets occasional use as a last ditch hail Mary. But it's not useful on melee jobs, and definitely not if you have teammates on melee jobs (or really, if you have teammates at all, but especially melee teammates).

There are lots of times when you'll need to move enemies, but it's in order to position and face them where you need them to be, not just to kite them around.
