People just don't recognize the system by your description because right now, it looks like lists. If they put all the skills on the action bar, made Qual, Dur and Progress into HP bar graphic, we would have exactly what you just described.
Theres a F2P game called Mabinogi. Not a bad fantasy type game for a freebie. Crafting wasn't too deep, but for say armor making, you'd have a small window with 5 dots, and a timer, you had to try and click your "Hammer" as close to the dots as possible in the count down, closer you were, better the effect (Or non fail it was a long time ago)

Cloth was stiching in the correct pattern quickly etc etc. Point i'm making is although it was a "mini game" it was easy to understand, wasn't some elaborate puzzle and was over quickly. But it made you put a little effort in.

I'm sure if SE wanted something interactive like this they could make a much more attractive version. Could even add something like this to save your item from a failure provided you gained X quality.

I Enjoy having crafting as more then a click once and wait a few. At the same time i'm not sure if its the system, or the UI elements that i interact with that make it some times, less then interesting.

Even though it requests input it feels very passive. I wouldn't mind a much more active system. even if it makes me hit the nails myself
