I only have 2 AF, and only want 2 AFs. Bard is giving us problems. DRG, WHM and BLM are easy with a good party that has communication. ( mumble, vent ) Haven't done WAR. I saw monk wasn't so hard. Story was sick though.
It's not suppose to be "cut my nuts off hard" but rather enjoyable. I'm liking the fights, they aren't boring at all. I've done BLM fight a couple of times now to get everyone we know their full set. All wins after a few losses.

The series of quests you refer to are not meant to be challenging for someone who is Level 50. Yes, they were completed quickly, but do keep in mind that it was completed by people who are already level 50 in all their classes.
Should anyone who is not level 50 already (including all new adventurers and those who have yet to train those classes), then such a feat is not possible, as it would require them to level from 30 to 50 as well.
If one keeps in mind one can only progress every 5 levels, then it is not a 'fast' feat that is easily accomplished.
Fortunately, for those who still seek challenges, there are many out there. Of course, most challenges can be solved by throwing as many BLM as you can find at the problem. But if you choose to not take that route, then a challenge shall await you.
/10charactersThe system starts at level 30 and features a sequence of special quests available at certain levels that unlock systems, abilities, and job-specific equipment. The series of job quests do not involve extremely difficult tasks such as fighting primals. Rather, they are new game elements intended to boost character growth and motivate players.
My LS and I are quite enjoying the difficulty/design of these quests. Almost all of the final battles have been really fun.
Only complaint I have is the final BLM fight requiring several BLM and the fact that you can wipe/the fight can spiral out of control and become unwinnable within seconds. Should be able to be done with a balanced party IMO.
First of all, while allowing us to switch classes for the last Job quests is nice to one extent, it would certainly be more 'interesting' and thus 'challenging' if this wasn't possible.

Extremely challenging content that's been beaten less than 48 hours after patch? {Hmmm.}Cutter's Cry is an extremely challenging instanced raid meant for full parties of eight adventurers, consisting of Disciples of War and Magic at level 45 or higher.
Neither CC nor AV's mechanics are overly challenging to figure out at all but the execution for completion is not a cake walk. No one has even scratched the surface of SR5C for either instance which is where the bulk of the /airquotes extreme difficulty lies.
