undercutting is when you list something for 5000 and someone puts the same item at 4999 so it appears right above yours.

Which is a perfectly fine thing to do. If they have time to stick to the market board to undercut everyone to ensure their product is being sold, then they deserve it.
Now if we're to bring bots to the equation, then it's not a fault of the market board system itself. But SE's fault for their lack of action against them.

Games can always change their system to make it better for their players. Do you think OSRS always had the grand exchange?
No! Players used to have to trade with each other directly and shout their wares outside banks.
The devs changed it and made a very good and easy to use system.
FFXIV can always change theirs to make the market more fair and easier to use.
One of the main reasons why 1.0 failed is because the devs didn't look at how other games were doing things better.

Changing the market to match osrs's Grand exchange would eliminate the ability for bots and players both from continuing this sleazy practice. You want your item to sell quickly, you list it below the algorithmically determined average (as dictated by how players are buying and selling them, again to reiterate so some of you smart ones don't assume i mean SE is setting market averages again) and guess what, it almost always sells instantly because players also have the ability to put up buy offers and wait for a purchase to come in much like someone putting up a sale and waiting for the sale to go through.Which is a perfectly fine thing to do. If you're content with mediocrity then that's good for you. Let people that care to have a superior market system have a superior market system.
And as I said, the MB is the least of their concerns.
