As a avid Fisher dedicated to catching all the big fish in the game I use it to blow apart everything I catch, and while this provides a stream of things to sell for a few gil the big win is that it gives me tons of water clusters, and crystals which when sold in reasonable sized stacks generate a nice income. It's not going got make me a gillionair but it lets me buy the odd minion or materia for melding.
There are also a few pieces of glamor swimwear and a minion that can sell for a bit also.
Now it's not as profitable a desynth as others are. But since I have all these fish it makes sense for me.
If you're desynthesising fish, the sand that you often get is an ingredient for mortar, which is used in a lot of housing recipes - so don't just assume they're worthless and throw them out.
When desynthesis was added, several big fish could be desynthed into very lucrative swimwear and/or rare glamour ingredients. That was the original reason to level CUL desynth. They don't seem to have kept up with that though, since I can't recall anything SB fish that desynthed into anything particularly worthwhile, but the possibility is always there that they could do it again in the future.
Alternate reason for CUL desynth: It's cheap/easy to level up, and tons of fish have literally no other purpose in the game.
It's also easily available via lv15 mining points, so it's pretty worthless.

there's a big fish in yanxia that can desynth into an Onishi Dogi. (crafting body piece)
Interesting, I was not aware of this. However, it's not exclusive to big fishing desynth like the swimsuits, so it's also rather disappointing. They should've made it spit out the Ornate (5 materia slots) version, at least. Come on SE, give me a reason to care about CUL desynth.

There are almost 800 fish, but only about 10% or so are of any use in crafting, so they are basically just shard farms. A few of the rare fish drop better items, but I have yet to get anything interesting from a 60+ fish - perhaps they quit in the last expansion, or I just don't feel like farming some rare fish that you can only catch during a tornado at midnight on a sunny day.
