Is there any way to breed your bird with someone elses ? or do you have to rely on the covers they sell / make 2 racing birds from ground zero?

Sadly you can only breed yours with covers you buy on Gold Saucer...

When you want to buy the cover, you can see their ranks, like G1, G3, etc. If your current bird is G4 then buy G4 cover.

The paper they give that lets you breed the retired bird is untradable, so currently no way to use another players bird.

You can only breed using cover permissions bought from Chocobo Square or using retired chocobo certificates. You don't have to train a chocobo up to rank 40 every single time though; if you get a chocobo whose stats aren't what you want, you can retire it at any time (but you don't get a retirement certificate under rank 40) and try a new covering.

You have to breed using covers or your own retired chocobo certificates.

That being said, I want to make it clear: buying higher ranking chocobos (ex: G4 instead of G1) won't give you better stats. You can get great stats if you buy G1 so keep buying until you get some great ones. I think I managed to buy one which had 3 stats fully starred out on one side several times.
