Trying to figure out how exactly to unlock the hunting log...
From what I've read, its supposed to unlock after your first class quest.
I just finished my level 15 class quest and it hasn't unlocked yet.
Am I missing something?

What class specifically? Each class gets their own Hunting Log upon completing the first class quest for each upon joining each Guild. Classless Jobs like DRK do not have Hunting Logs however (the actual Hunt, unlocked from the notice board in each GC HQ, outside the tavern in Ishgard from level 50, and on a wall in Rhalgr's Reach and outside the teahouse in Kugane from level 60ish, replaced it).
Are you looking in the right place? The Hunting Log can be found under the Logs menu and then clicking on the relevant class logo (when you join a Grand Company you're also given a seperate Grand Company Hunting Log which rewards GC seals instead of EXP and which can be selected from the same screen by clicking the nation flag of the GC).

If you've just finished your level 15 quest, then I assume this is for something other than DRK (and I'm guessing that you boosted DRK).
The hunting log only needs to be unlocked once, after which it is immediately available to all other classes, so it's possible that boosting a job unlocks the log automatically.
As Enkidoh said, have a look in your Logs menu to see if the hunting log is already unlocked.
If it's working, you'll see hunt targets marked with a yellow symbol over their name - but only when you're equipped as the class that needs to hunt them.
Extra jobs like dark knights don't have hunting logs.

Yes, I boosted to DRK initially, and recently picked the game back up and I’m leveling rogue.
I have access to open the hunting log, and i have some of the immortal flames completed..
But I can’t actually select any of the other class hunting logs.
Any ideas from here?

Class is rogue, I have DRK which I boosted in the past. I can definitely access the log and I’m halfway through immortal flames rank 2, but I can’t actually select the other class hunting logs
They unlock when you complete the level 5 class quest.
