Why not simply give GNB a reskin of the PLD lion? PLD has a while lion, GNB will get a clssic yellow / brown one. Easy.

Because that would be lame.

So far, every Tank has gotten a unique mount. In most cases, completely unique from anything else in the game (The only exception is the ARR CE gives a Coeurl and DRK also has a Coeurl as a mount)

On topic:

I think that Gunbreaker already has enough VIII references, what with being developed by the Hrothgar (With lion-esk features), having weapons designed around Squall/Seifer's Gunblades, having a plethora of skills with names from Squall/Seifer's skills, with the ShB CE coming with a glamour version of Squall's Gunblade. Most likely their LB3 will be based off one of Squall/Seifer's moves too.

I don't think that it necessarily needs to also have a Lion mount to further reference the already heavily referenced game.

Though, that said, you could easily have something Lion-esk if you really wanted, that would be unique, such as a Bandersnatch:
