We are all aware of the problem, and there's nothing we can do about it. It sucks that the new players don't get to experience older content the way a lot of us got to, but that's just the way the game evolves. Lv50 content is now a stepping stone, but now that you're 51 the learning experience will pick back up because the content is fairly balanced until you get to 60. Lv 60 content will be zerged like lv50, but then once you get to 61 it rebalances and repeats until lv70.
The problem, again, as Hyo succinctly points out, is that there are large gaps in item level at 50, 60 and 70. The content you have problem with was tuned for level 45/55 gear (fresh lv50 gear) but the gear cap itself at level 50 is 130/135. So there's 80 some odd levels of gear just for level 50 characters. If I were to join as a level 70 character, it would sync me down to the highest gear at lv50, not the lowest entry level gear. Maybe we can have a debate about whether SE should fix that or not, but that's a separate discussion. Same applies at level 60, entry level 60 gear is around 190 item level, but the gear cap is 270/275. Again a wide range of gear for just a single character level. That's because these were level caps at some point but content had to keep scaling up until the next expansion, instead of giving us extra levels we just get more powerful gear.
This is such a non-problem once you get to current content, which is why most people are finding your comments rather silly - you are just getting feet wet in this game, there is so much more to do and you shouldn't let 6 year old content dictate your feelings about the game or it's players. I mean, even the job(s) you are playing now aren't the same as the were when said content was relative, lv50 jobs are a shell of what they used to be when lv50 was the cap.
On the bright side, consider this: if you stick with it and make it to 70, soon there will be a new expansion and you'll get to experience it all as it was meant to be experienced, before nerfs/adjustments/job changes ruin it all later down the line.
We are trying to tell you it gets better*, but if you want to stay hung up on 6-year old, dead lv50 content - it's your call.
* - the attitude of players wanting to complete content as fast as they generally can does not change, but I don't think that's an exclusive phenomenon of THIS game. It's likely to occur in *any* game where you have repetitive farming/looting designs. If you want a "stop and smell the roses" type of game, you're probably going to have to go offline.
