They aren't removing the story from you, they added the MSQ skip books for people who don't care about that part of the game. It is a option for someone who doesn't care about that aspect of the game, it has no impact on you personally. Just because the game puts emphasis on the story doesn't mean that every single person that tries out the game is going to be interested in it, the skip books give more players more options for how they want to approach the game and more options is never a bad thing.
I will say that at least the MSQ skip keeps the structure of the story. Your character still completed those quests you skipped unlike in WoW where progression breaks because you literally just skipped the quests and they're still there undone even though your character is now doing quests that supposedly happened after those quests you skipped.
