It feels like I'm giving up if I go as anything else.If you're worried about going into new dungeons as a tank, you might want to look at getting a second class with a different role? It's so much better to go as a healer or DPS first and just "follow the leader". I'd hate to be learning dungeons as a tank, and the queue times aren't that bad.
Also if you're following the story, it's quite a jump from the start of Stormblood to where the skip would put you. It's my least-favourite main story but the post-credits story has been good and sets up a number of new reveals and information.
also I really don't care about that story after the encounter with xenos, so the world could blow up for all I care.

It isn't giving up at all. It's a game where by design, you can choose whatever role you want to play.
Tank is a role best played with experience. Right now you're 'in training' and need to get that experience, so do it in another role so you can watch and learn now in preparation for being a good tank later.

It's not really giving up, think of it as gaining more knowledge about fights before you decide to tank it. Not sure what your issue is with the xenos encounter so no comment there. Tanking requires developing a thicker skin when it comes to tanking with randoms, dont take anything negative they say to heart. Dont let others dictate your enjoyment for you, just do your best and move on.

To be fair, if you want to buy a story skip just because you are afraid of entering in a dungeon, that's sort of giving up already. The skip will probably be here alongside with Shadow Bringers but the skip won't solve your problem. Only you can solve it.

I'm confused. If you're uncomfortable tanking new duties but don't want to play another job, what do you do in the game?
You will be new to dungeons in Shadowbringers too. If you queue for roulettes after you buy your way to Shadowbringers you might get put into those dungeons you don't know anyway. Do you avoid all duties you're new to? How do you do the main scenario quests, and how do you progress through the game? Are you going to wait another two years for a Shadowbringer's skip?
We've literally all been new to these dungeons at some point, and most of us played them after day one. I'm confused as to how that makes a difference. Please explain that one to me.
All you have to do is go in and spam your aoe aggro. Dungeons are much easier than you're making them out to be. One button generally works for everything, and they are not mechanically intensive. They're inherently designed to be as easy as possible for the weakest of players.
However, you're most definitely giving up by using the potion in this way. That's most definitely the case. How is it not? If you find tanking to be too stressful, maybe the role isn't for you. There's nothing wrong with that.

Okay, so do you intend to tank in Shadowbringers, OP?
If so, you're going to run into the same supposed problems there too.

For a few dungeons. What about the rest of the content? What's the point in playing a tank if he's not willing play with other players?

Good point, why even play an MMO if you can't deal with other players? For the story? But buying the story skip, you won't get that either. *is confused*
