O would say it all depends on the item, some items you can sell in large stacks (like ores, logs and water) others are better to flip in smaller volume. (things used in CUL for example)

Don't expect to make tons of money instantly, gathering is less money but it's more consistent than crafting/materia can be. And always go HQ whenever possible.
