    Should I finish La Noscea?

So I'm brand new to FFXIV. The only other MMO I've played seriously is ESO and in that you usually do an entire map/area before leaving to the next.
Well, I just got the airship pass in the main mission that lets me go to Gridania, but I have yet to go to Upper/Outer/Eastern La Noscea.
If I keep doing the main mission will it lead me back there? Or should I go do those area's before leaving?

You will eventually go to all of the areas, the ones you mentioned are above your current lvl anyway. Following the msq is the best way to go.

The main mission will take you through every single area eventually. Finish the quests you already have, but do not venture into any areas you do not have quests for. Upper/Outer/Eastern La Noscea are for higher levels than you currently are anyway.

Follow the main questline, do quests in each questhub as you come upon them, and you will be fine.

Also, in case it wasn't absolutely clear, these zones will remain available for you to explore at any time. You can return to La Noscea whenever you want.

Also, when you head into Gridania and Ul'dah, there will be some lower level sidequests. You can do those on your main class if you want, but if you plan on adding additional classes, you might want to leave the low level sidequests for those. They're good XP on-level, but not when you significantly outlevel them.

And since getting the airship pass opens up access to those other cites, that means you now have access to the guildhalls for all the ARR classes. A lot of players choose that point at which to unlock several of them and try them out. You might even decide you like one of them better than your starting class and switch your focus to that one or decide to level a few in tandem, alternating quests between them.

Alternating quests between multiple classes is particularly useful if you like to finish all the side content in an area before moving on. Trying to do everything with just one class might level you faster than you progress through the main story, leaving you over-leveled for your main scenario quests. Spreading out the XP by alternating content between a couple classes works better for a lot of people. (If you also like to do things like run dungeons multiple times to try to get their best treasure drops, you might even want to make that several classes you alternate between. Dungeon runs give a lot of XP.)

Oh, and sometimes even a single region has areas at different level ranges. For instance, after visiting the three main cities, you're sent to do a dungeon located in Western La Noscea, a region that's mostly around your level. Or about 2/3 of it or so is around your level at any rate. But in the western side of that region, beyond a pair of big gates, there's an area for players in their 40's. Whenever there's a big jump like that in level ranges within a single region, there will be a clear boundary marker (those gates I mentioned in this case) and NPC's who warn about tougher enemies beyond it.
