Like, approximately what level.
So far I'm three levels in and I'm quite bored.
Is there some other way I can acquire my job's level 70 dyeable gear than to do this?

I'm level 37 and it hasn't happened yet, so . . . I'm still in trying to finish the pagos stage of my weapon as there is little point of going on to Pyros until then. Most opinions I've seen say that Pyros (35+) is better than Anemos and Pagos but I've know those who disagree. If you don't like old-school style MMO grinds, or at least can't stick them out, I'd recommend doing some other content than Eureka. If you only want the AF you don't have to do any Eureka past Anemos. Definitely get on the NM train in Anemos as soon as possible; doing your challenge log for this week should get you high enough to start.

You might want to wait until Eureka is either nerfed into oblivion, or for the gear to be made purchasable by other means. For dyeable Heavensward gear for example, you only have to grind Centurio Seal Hunts for 1-2 days to get a full set. I imagine they'll implement a similar system in Shadowbringers.
Umm.. It doesn't... And don't believe what you hear about Logos actions... They don't make it any more fun either with how annoying they are to get.

Okay, I'll put it this way: what is your objective in Eureka? Relic(s)? Glamours? Emotes/hairstyles? Mounts/minions? I feel like if you have a specific goal in mind, that should help a lot. Just... close your eyes and imagine that you're doing something fun and worthwhile while slowly working towards your objective. Let your body do Eureka, and distract your mind with something else. I can't say it will be worth it in the end, but if you are able to justify the ends regardless of the means, you may be able to convince yourself that you had a good reason for thinking it would be.
If you're not having fun now, then you're probably not going to have fun at all. Unless you're into even more soul-crushing grinding and bunnies that will lead you to your death.
The "NM Train" is going to be your fastest way to level and get the tokens you need for your gear. Not sure if it's still kicking though.
Logos are quite easy to get.
And with how easy they are to get in Hydatos from bunnies mutated chests and mob drops they are starting to crash massivly in price on mb.You should be able to get them for enxt to nothing soon.
And the logos themselves are actualy quite fun.Can make some really interesting combos on jobs with the items.
About when it gets fun.Well Anemos is extremly boring.Pagos is a bit more interesting with the terrain and the addition of bunny fates Not to mention the fates start to get interesting mechanics but the light grind is what makes it really awful.
Pyros gets a lot more fun because the logos make fighting mobs more interesting.Downside is how condensed the map is with mobs making it very hard to move around.
Hydatos is arguably more boring than Pyros in terms of the actual map.Having said that the map is much more noob friendly to navigate with a much lower chance of getting one shot by random mobs trying to get from A to B.
Some of the fates are very interesting in Hydatos.Fun mechanics ona lot of the bosses.There's alot more mobs here that mutate too so which is good for lockbox farming at all levels.
And from what ive heard so far the dungeon seems to be quite fun but nowhere near as extremly hard as it was made out to be.Just it does require some optimisation with parties and logo setups.
You mentioned dyeable gear, so I'm guessing maybe that's the main thing you're there for.
If there is still an "NM train" running in Anemos (ie. all players converging onto FATEs), that's the quickest way to get good amounts of crystals for upgrading your gear.
The exact etiquette for getting into parties will vary according to your server - on Elemental (JP) people will "put their hand up" in /sh chat with a "ノ" symbol (or "/" seems to work too) to indicate they're looking for a party once an NM location is called, and then the group will disband afterwards.
You might need to be selective about which gear you actually upgrade, depending on how hard it is to get crystals.
Also, for leveling up, the Challenge Log gives good EXP - but trying to do it solo is a long tedious business. If you can pair up with someone of the same level, you can get it done at least twice as fast since you both get credit for each monster killed (and don't take as much damage, so less time spent healing). And of course a whole party is going to be much faster again.
It starts getting a bit better at Pyros because fates mobs are a bit more interesting.
