Depending on whether you feel more comfortable starting from 1 or diving in and playing around with stuff @ 30 pick up either GLA/MAR (I prefer paladin, myself) or DRK, and if you're uncomfortable tanking in groups run with your squadron for a bit to get a feel for things.
Ask a friend to show you the ropes on tanking.
I help out my buds all the time on " How to tank for dummies ".
Challenge the weak to make them strong.
Trial by fire, Aurum Vale until you get the hang of it. DRK might give you a taste of Gunbreaker because it uses Dark Arts to enhance some skills and spends Blackblood on attacks.

Pick a tank class and play it. Grab friends for the first few runs while you work it all out, then go forth and enjoy the benefits of tanking. You're on a NA DC, so developing a thick skin also helps.
Same thing I was thinking. Not fan of tanking, but gunbreaker looks awesome.
My tanks are lvl 70. I prefer PLD as that's the only one that "feels" like a tank wither their sword and shield. I'm mostly just not sure on some things like, during a boss fight should you be cycling through your defensive cool downs on cool down or waiting to use them for a tank buster / party AoE? Also how do you recognize a tank buster if you've never seen the fight before?
I don't play tank that much in any kind of high level content, but I'll say what I do. I usually go in build enough aggro, usually like (I play WAR) the ranged attack or whatever to build some initial aggro (so people don't pull with one of theirs), do one aggro rotation, then I completely switch to dps stance and only do a dps rotation. If the dps are handling their aggro dumps/diversion, that should be ab out all you need. That's probably not the most optimal, but it works. You lose out on initial burst definitely. My tanks are lvl 70. I prefer PLD as that's the only one that "feels" like a tank wither their sword and shield. As for DCD, get used to when the boss(es) are gonna use an ability. So, like practice a fight, know that this cast is gonna be a tank buster, or something, so you can precast your dcd right as he hits. Same thing with healers, know the fight when you need to precast so you get off a heal right when the attack hits, etc. I only cycle through certain dcd on mega pulls in dungeons. In my opinion, it's better to save your dcd when you need it the most. What can end up happening is you waste a dcd if you just cycle through them when no big damage is happening.
Mostly about knowing the fights. Such as this one gives you more parry, or damage mitigation, etc. So, you use this for this, or this against this enemy, etc.
Damn, I'm not being very articulate. Hey it's late.
Lots of edits.

Fundamentally, tanking is very simple.
For trash, you're just going to be using your AoE enmity move a few times to get everything glued to you then either do your single-target rotation or AoE spam everything down. Cooldowns should popped on a rotation to ease healing or as an emergency if you're about to die.
For bosses, you're going to mostly be respecting the same mechanics as everyone else, but need to pay attention to when tank busters are coming and pop your mitigation cooldowns to avoid being one-shot or killed by the auto-attack that tends to follow shortly after. In raids, there's generally either a debuff that forces tank swaps or an add the off-tank needs to grab and position for a quick takedown.
As a general rule of thumb, you never want to be facing enemies towards people or standing near them due to a lot of them having AoEs telegraphed and otherwise that will be targeted on you/aimed in your direction.
A decent general rule is to cycle through the weaker ones, hold the big ones for tank busters. When you learn the fights you can adjust from there. My tanks are lvl 70. For fights you've never seen before, you'll probably be in tank stance so you're basically running a full time defensive cool down. When you see yourself take a massive spike, that was likely the tank buster and now you know where to place your real CDs so you can move out of tank stance.
