Can someone explain why the hell I need a Fieldcraft Demimateria III to craft an item to get another Fieldcraft Demimateria III? Like seriously? Why?

Relax. You never need to do that.
There are items that are crafted with FC3 demimateria that can be bartered for an FC3 demimateria.
This is because there are times when you need an HQ version of those items. If you fail at crafting that and only get an NQ item - then you can turn it in for an FC3 demimateria so it wasn't a total loss to craft the NQ version of the item.
Demimaterias are part of desynthesis endgame. Desynth is entirely random, so many crafters don't have/want desynth leveled.
Even at 100% rate, which mats you get from desynth will be taken randomly from the choices/mats used to make that craft.
Like Auriana said, instead of getting nothing back from a non-HQ craft, the trade is there mostly to help crafters get their master books/gears.
