I want an armored dress, ideally with frills.
I would've actually liked to see FFXI job AF find their way into XIV for their respective counterparts. (I suppose AST could've borrowed GEO's XI set or something since their SB job quests makes them so intertwined).
I was secretly hoping one installment of Eureka would do that, what with the upgradeable Stormblood AF in Anemos, but that's been pretty much shot-down.
Unfortunately 'Judge' armour is already in the game, but unattainable by players (and always will be) - it's what the armour the GMs wear is identified as (although they look nothing like the FFXII Judge gear). Having said that, there is nothing really stopping SE adding Garlean Legatus armour for players (lets face it, it's clear the Garlean Legatee are based on Archadia's Judges in FFXII) so with how it seems Shadowbringers is shaping up, it's always a possibility.
Oh I agree! I would love this for my PLD especially so much! Maybe not the gunblade and shield, but definetely the armour!
As for other choices, Rosa's outfit from FFIV, Celes's opera gown from FFVI, Aeris's original costume design from FFVII (not the Compilation/FFVII AC redesign) and Garnet's princess gown from FFIX are all desired outfits I would so love to have in the game. (Yes there is a pattern there, I love pretty dresses! :3).
FFXI - Shanttoto's outfit (also, please include her signature laugh as an emote).
Tifa's "Advent Children"; Yuffie's "Advent Children"; Cissnei's "Turk" outfit from Crisis Core; Tifa's Cowgirl outfit from Crisis Core...

Rydia glamour for the ladies. Edge for guys.
Locke Cole. Sad we didn't get that eastern thief set in that last player-created armor contest, because it was very Locke-esque.
Chapter 2 Ramza Beoulve. More than likely we'll get his chapter 1 clothes, but I prefer the subdued mercenary armor he takes on. Bonus points if they add a hairstyle with a single strand of wonky hair.
Agrias Oaks. Wouldn't be a challenge to make this available for men as well as ladies, and label it "Holy Knight's Attire." Again, not too flashy, but fairly subdued yet still eye-catching.
As always, bonus points if everything can be dyed.
