You should NEVER need a 338 page document to be able to understand crafting! PERIOD!!!!! So I would disagree with you, FFXIV does not have the best crafting.
You really don't have to read a 338 page document to craft. Think of it more like a long journey, where you gradually work your way to becoming an artisan, constantly learning and improving your technique. For those of us who love crafting, the depth and complexity adds to the experience and satisfaction when you reach the top. For those who don't like that depth, you can power to lv70 with leve's and namazu quests, slap on a basic lv70 white hq set and make the bulk majority of items and furniture in the game with basic craft knowledge.

There's something for everyone. It's accessible to those who just want to make basic items, but has depth for those who want to master it. A mistake a lot of players make is being casual crafters, yet wanting access to the absolute endgame crafted items. It just shouldn't work that way, similar to how Normal raiders shouldn't be able to easily clear Ultimate.

That's also another "deal maker" for me in that FF hasn't caved in yet on making absolutely everything simple and effort free, like WoW has. I hate games that treat you like you aren't intelligent enough to handle complexity and try to spoonfeed and hand everything in the game to you. FF is far from perfect on that, but they hold strong on certain gameplay elements, unlike WoW which has thrown it aside completely.
