I would definitely like to see less robes for mages and less gear with 1 weird, out of place spike or piece of cloth jutting out of the shoulder or hanging from the waist. They keep adding these weird attachments to clothing just so they are asymmetrical and it just makes a lot of them look ridiculous imo. Just look at the ala mhigan crafting top's weirdly inflated belt bag that hangs to the shins, the gamblers jackets shoulder spike, the chimerical felt tabard of aiming and the awful flower petal skirt attached to it or every other piece of gear we get. You can make things look good without adding a big steel spike to the left shoulder. /rantover

I actually really like the male version of the Garo mage coat and would love to see more things like that for other jobs. It flows nicely too.

Dyes should definitely be changed. The fact that I try to dye a shirt that is 5 separate colors and every part turns a weird variant of my dye is just off putting on many pieces. Like the aforementioned High Allagan coat of healing. I just wanna make the red parts blue man, that's all.
The symmetry thing really throws me off sometimes too, honestly.

I've also often questioned the weird hanging extra bits on some of the gear, such as the WAR artifact gear for Stormblood (why do they need a massive blade chained to their butt?) or the weird ring of spikes on the bottom and back of the last Omega scouting piece that I imagine clips through the ground when weapons are drawn. The Strife Vest is another major offender, with its sheaths for eleventy hundred swords on the back.
