FFVIII: Squall used his with two hands, Seifer with one hand.
XIII: Lightning used hers with one hand.
XIV: Gauis/Regula/Fordola/random Garlean commanders use their's with one hand.
Thancred: Shown pulling out a gunblade about the size of a PLD weapon, which is one-handed.
In Dissidia Squall also uses his gunblade with one-hand quite a bit.
You might be JUST a bit off-base about gunblades always being two-handed.

I do too but at the same time I’ll feel bad for tank mains if it ends up being a DPS class.
+1 about Gunblade as dps class. I can understand the desire to have another tank in their roster but... Well, i still remember the punch in the gut when SE made DRK a tank, it was not a pleasant feeling.

Man, I'm really starting to see why people have such a problem with them adding so many DPS classes. I main tank but I've been wanting to level MNK and RDM...I know remember why I began playing tank to begin with...because the damn queue times are horrendous.
At first, I'm like regardless of what class they add queue times are going to suck but even after cross-world party implementation and clusters which I thought would help, it's still 15-20 minute wait times for certain dungeons and roulettes when you're playing a DPS because a large percentage of people either enjoy playing DPS classes, hate tanking or enjoy the appeal of the DPS classes alot more than the tanks. (There is a lot more variety in DPS classes)
I don't care if the Gunblade class (which I'm calling a SeeD for now) is a tank. I really hope it gives people a reason to try tanking.
I have my tanks at lvl 70 and I can honestly say I can't stand tanking. I hate leading the party, hate worrying about trying to keep hate on everything while still trying to DPS as much as possible. It's very tension building. I like focusing on my rotation and avoiding aoe markers. That said if Gunblade is a tank I won't be that disappointed. I'm definitely inclined to agree, but they did say there would be "multiple" jobs. Technically that means "more than one" but considering they said that BLU isn't part of the 5.0 lineup I also believe that there's another dps job coming along with a healer and tank. Don't get me wrong, I will be maining the Gunblade job regardless of whether it's a dps or a tank. I've been waiting since 2.0 dropped when it was mentioned that such a job would be a possibility once we got closer to Garlemald. FF VIII is also my favorite game of the series with Squall being my favorite character. Hoping for a dps though, but it's more than likely going to be a tank.
I think that's the thing that makes tanking so appealing to me. For me, the most important thing about tanking is keeping your party alive so I'll put postioning and cooldowns over concerning myself with DPS. From what I understand, the whole DPS thing comes from the raiding scene which I don't do so I could care less about the kind of meta those most people cocern themselves so much with. I do like big numbers but as long as I'm doing my job as a tank, I'm alright. Tanking is a breeze, pull things, hold aggro, use cool downs (the healer will love you) and let the DPS kill shit.
