    The way i see it, the npc give you as usual a stone, a lvl 1 and 50+ weapon, and tell you to talk to him again when you have equipped them, as usual too. And then a dialog box ask you to either begin at lvl 50+ or lvl 1. If you choose the former you can begin the job storyline right away, and if you choose the latter the following quest will stay locked with a red icon until you reach the level needed for it. Way more easier to do, and less immersion breaking too, than to use the mogstation or lodestone for that, since level locked quests are a common feature of the game.
